Crazy for cranberries

This winter has been a fun time learning all the reasons to love cranberries and enjoy all the vitamins C they offer.


It started with the most simple cranberry juice from Barefoot Mimosas on Instagram. I altered her recipe slightly, using honey in place of sugar and leaving out the lemon juice because cranberries are sufficiently acidic.


Into each warm quart jar add:

1 1/2 cups clean cranberries

2.25 oz. honey

Cover with boiling water to 1 inch headspace and process for 25 minutes plus adjustments for altitude.


You are supposed to wait 4-6 weeks before enjoying them but I couldn't wait to use them in a second ferment with my ginger bug.
